Use of dry ice in all stages of winemaking, in order to prevent any oxidation reaction and conduct the entire fermentation process in reduction. Destemming and crushing of the grapes, soft pressing of the same. Followed by static cold decantation of the musts and alcoholic fermentation with inoculation of selected yeasts.

After destemming and crushing the grapes, soft pressing follows. This is followed by cold static decantation of the musts and alcoholic fermentation in stainless steel tanks and a fraction equal to 15% of the mass, ferments in 225-liter French oak barrels. Alcoholic fermentation with inoculation of selected yeasts.
In steel tanks in contact with its own yeasts for six months.
